Ingredients
Avocado Lime Dressing Recipe Ingredients
- 1 medium avocado
- 1 medium purple onion, diced
- 1/2 cup fresh squeezed lime juice
- 2 tablespoons lime zest
- 2 tablespoons extra virgin olive oil
- 1 teaspoon sea salt
- 1 teaspoon black cracked pepper
Avocado Shrimp Summer Salad Recipe Ingredients
- 2 lbs large boiled shrimp, peeled | deveined | chilled
- 2 large avocados, peeled and chopped into chunks
- 1 medium purple onion, chopped
- 4 mini peppers, diced (red, yellow, orange)
- 1 english cucumber, chopped into small cubes
- 2 tablespoons cilantro, chopped (optional)
Don’t care for cilantro? No problem! Substitute with fresh italian parsley.
Instructions
Zesty Lime Dressing
Add the avocado, onion. lime juice, lime zest, extra virgin olive oil, salt, and cracked black pepper into a mini food processor or blender and puree until completely combined. Chill for at least 30 minutes.
Shrimp Salad
Add the shrimp, avocado, purple onion, cucumber, peppers, and cilantro (or italian parsley) into a pretty bowl.
Summer Avocado and Shrimp Salad Recipe Assembly
Drizzle the Zesty Lime Dressing on the shrimp salad and gently toss to coat.

Easy Greek Yogurt Tzatziki Sauce Recipe
Ingredients
- 1/2 English cucumber skin removed and seeds scooped out
- 2 teaspoons salt
- 2 cups plain Greek yogurt full fat
- 2 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 2 garlic clove minced
- 1/3 cup fresh dill chopped
- 3 tablespoons extra virgin olive oil
- 1/2 teaspoon salt
- 2 teaspoons black pepper
Instructions
Make The Tzatziki
- Add the Greek yogurt, lemon juice, lemon zest, minced garlic cloves, chopped dill, extra virgin olive oil, salt, and pepper into a mixing bowl. Stir to combine. Set aside.
- Using a grater, grate the prepared cucumber. Using a cheese cloth or a paper towel, squeeze out as much juice as possible. (Save the juice for lemonade or ice water.)
- Add the cucumber into the mixing bowl and stir to combine.
- Cover and refrigerate for at least 1 hour or until ready to serve.
- Spoon into a pretty dip before serving and garnish.
Garnish and Serve
- Garnish with fresh dill and drizzle with more olive oil (olive oil optional). Serve with soft or baked pita chips.

- If you are a garlic lover, add an extra clove.
