Crumble the drained feta cheese and pat excess water out with a paper towel.
Add the feta cheese, cream cheese, sour cream, garlic cloves, lemon juice, honey, salt and pepper into a food processor. Pulse until completely combined. Drizzle in olive oil until just creamy.
Assembly
Add the whipped feta into a bowl or spread on a pretty platter. Garnish with the Marcano almonds, lemon zest, a sprinkle of flaked finishing salt, and a sprig of thyme or edible flowers.

Notes
I recommend getting as much water out of the feta as possible.
Be careful with drizzling in the olive oil. Stop when the whipped feta is just creamy. Swap the honey with hot honey for a little zinger.
