4fresh ripe freestone peachessliced into halves, seeds removed
8ouncesburetta cheeseroom temperature
3/4cupsfried and crumbled prosciutto
2cupsarugulawashed and dried
1/4cupsalted pistachios
Garnish With
Fresh Basil
Instructions
SALAD DRESSING
Add all of the ingredients into a jar with a lid and shake! SHAKE! SHAKE!
GRILL THE PEACHES
Grease a grill pan with coconut oil or butter and heat to medium high. Place the peach halves flesh side up and cook to 8 minutes. Flip and grill another 6 to 8 minutes.
PEACH AND BURRATA SALAD ASSEMBLY
Add a layer of arugula onto a pretty platter, board, or bowl. Tear the Burrata balls and place on arrange onto the arugula. Arrange the grilled peaches atop the arugula. Next, sprinkle on the prosciutto and then the pistachios. Lastly, drizzle on the tasty Zesty Dressing and garnish with fresh basil.
Notes
Crisp the prosciutto on the grill pan first. Skip the butter or coconut oil and grill the peaches with the drippings from the prosciutto.
