Ingredients
  

  • 1 cup fresh or thawed frozen blueberries
  • 1 tablespoon lemon zest
  • 1 cup white wine vinegar
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon sugar
  • salt and black pepper to taste

Instructions
 

  • Add all of the ingredients into a food processor and puree until well combined. Pour into a salad dressing serving bottle or a mason jar. Give this tasty Blueberry Vinaigrette Salad Dressing a shake before serving.

  2. Adjust the ingredients sugar for a sweeter taste.
  3. I do recommend a light oil for this recipe. Heavy oils such as walnut or grapeseed will give a bitter aftertaste that distracts from the bright blueberry flavor.
