The Ultimate Cheesy Tater Tot Cups
Makes 24
Ingredients
- 48 Tater Tots, thawed (32 ounce bag)
- 1 cup sharp cheddar cheese (I used Cabot Seriously Sharp White Cheddar)
- 2 apples, peeled, cored, and grated
- 3 prosciutto slices or 4 bacon slices, fried crispy and crumbled
- 3/4 cup sour cream or plain Greek yogurt
- chives, chopped
- sea salt and black pepper
TOOLS YOU’LL NEED
Instructions
Preheat oven to 350° F.
Place a 24 cup mini muffin pan in the oven and heat for 15 minutes. Remove and spray with cooking spray.
Place 2 tater tots in each well of the mini muffin pan and let them thaw completely. Add a tiny bit of shredded apple in the bottom of each well. Use clean hands to smash the tater tots creating a well/cup.
Sprinkle on the shredded cheddar cheese. If you are using prosciutto add it now.
Bake for 15 minutes or until golden brown.
Remove from the oven and let them sit for 3 minutes. Next, remove from the pan onto a platter placing them in mini muffin cups.
Top with a dollop of sour cream or greek yogurt. Sprinkle crumbled bacon (if using), chives, black pepper, and sea salt.
Serve warm or at room temperature.
