Mini Homemade Strawberry Pop Tarts
Ingredients
Makes 8 Mini Pop Tarts
Strawberry Pop Tarts
- 2 premade pie crusts, cold
- 1/2 cup strawberry jam
- 1 tablespoon cornstarch
- 1 egg, beaten
Icing
- 1 cup powdered sugar
- 2 ounces cream cheese
- 3 tablespoons strawberry jam
- 4 tablespoons heavy cream
Strawberry Pop Tart Instructions
Preheat oven to 400°F. Line a baking sheet with parchment paper and set aside.Line a second baking sheet with parchment paper and place a cookie cooling rack on top. Set aside.
In a small dish, mix ½ cup jam with cornstarch and set aside. Sprinkle a little flower on a clean work surface and carefully unfold a pie crust. Using a sharp knife or a pie roller, cut the edges off the circle to form a rectangle.
Next, cut straight across the longest direction of the dough. Then, make three more cuts in the opposite directions to form 8 small rectangles.
Repeat steps 5-7 with remaining pie crust.
Add a spoonful of the strawberry jam onto the center of four of the small rectangles.
Lay a piece of the empty dough across the piece of dough with the strawberry jam and crimp the edges with a fork on all sides.
Using a fork, poke a few holes in the top of the the pop tart.
Next, repeat with remaining pie crust rectangles. Move the pop tarts to the prepared baking sheet and bake for 15 minutes or until golden. Remove the Mini Homemade Strawberry Pop Tarts from the oven and place them on the cookie rack to cool.
Mix the powdered sugar, cream cheese, 1 tablespoon jam, and 2-3 tablespoons cream together to create a cream cheese glaze. Spoon the strawberry glaze over the top of each pop tart and immediately sprinkle with sugar sprinkles.
Serve warm or at room temperature.

Hi There! Store these in an airtight container for 5 days in the refrigerator. Bake them at 325°F for 10 minutes before serving. Wrap them in plastic wrap individually and then in an airtight container in the freezer for up to 3 months. Thaw and heat like above! Happy Pop Tart Making to YOU! …And thank you for the question.
