Thai Cauliflower Rice with Crunchy Almonds
Ingredients
1 teaspoon coconut oil
1 head of cauliflower, cored and minced
1 small purple onion, diced
2 tablespoons fresh garlic, minced
1 teaspoon ginger, minced
5 carrots, peeled and diced
3/4 cup corn kernels
1 red bell pepper, diced
1 cup green peas
2 tablespoons red curry paste
1 cup coconut milk, unsweetened
3 tablespoons soy sauce
1 cup slivered almonds
pinch of salt and pepper
INSTRUCTIONS
1. In a large pan, add the coconut oil and heat to medium high.
2. Add the garlic, ginger, onion, and carrots and sauté until the carrots are tender.
3. Stir in the curry paste.
4. Toss in the red peppers and the cauliflower and stir.
5. Next add the coconut milk and the soy sauce.
6. Cook over medium heat for 5 minutes stirring often.
7. Add in the corn and peas and cook for 5 more minutes.
8. Stirn in slivered almonds for a delicious crunch.
