Sweet Peach Upside Down Cake
Ingredients
- 3/4 cup butter, softened, divided
- 1/2 cup packed brown sugar
- 1/2 teaspoon nutmeg
- 2 cups fresh peaches,washed and sliced with skins on.
- 3/4 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1-1/4 cups all-purpose flour
- 1-1/4 teaspoons baking powder
- 1/4 teaspoon vanilla
- 1/2 cup milk
Optional: Whipped Cream
Directions
1. Line a 9″ round cake pan with parchment paper.
2. Melt 1/4 cup butter and pour into the cake pan.
3. Mix the brown sugar and the nutmeg in a small bowl and sprinkle the mixture over the melted butter.
4. Arrange the sweet peach slices in single layer over brown sugar mixture.
5. In a large bowl, cream sugar and remaining butter until they are light and fluffy.
6. Beat in the egg and the vanilla.
7. Combine the flour, baking powder and salt.
8. Add to creamed mixture alternately with milk, beating well after each addition.
9. Carefully spoon the batter over the peaches.
10. Bake at 350° for 45-50 minutes or until a toothpick inserted in the center comes out clean.
11. Cool for 10 minutes before inverting onto cake plate.
12. Slice and serve with whipped cream.
