Spicy Pickled Pink Pineapple Recipe
Ingredients
- 1 Pinkglo Pineapple, sliced or cubed 1/4 inch thick

- 2 cups white vinegar
- 2 tablespoons sugar
- 1 teaspoon whole mustard seed
- 1 teaspoon anise seed
- 1 teaspoon peppercorns
- 1/2 teaspoon kosher salt
- 1/4 cilantro, stems removed
- 1 large jalapeño, stem and seeds removed/cut into rings
Pickled Pink Pineapple Instructions
In a small saucepan, add the vinegar, sugar, lime juice, mustard seed, peppercorns, anise seed, and kosher salt. Bring to a simmer and stir until dissolved. Turn off heat and cool in the refrigerator for 1 hour or until cold.
Arrange the pink pineapple slices, jalapeño rings, and the cilantro in a jar or a container with a lid. Pour the cold pickling liquid into the jar.

Pickled Pink Pineapple
Ingredients
- 1 Pink Pineapple sliced or cubed 1/4 inch thick
- 2 cups white vinegar
- 2 tablespoons sugar
- 1 teaspoon whole mustard seed
- 1 teaspoon anise seed
- 1 teaspoon peppercorns
- 1/2 teaspoon kosher salt
- 1/4 cilantro stems removed
- 1 large jalapeño stem and seeds removed/cut into rings
Instructions
