Southern Buttermilk Cornbread
Who doesn’t love a good ol’ piece of hot buttered cornbread? I sure do!
Today I am sharing my personal recipe.
Try this alongside my Black-Eyed Peas and Collard Greens
Southern Buttermilk Cornbread
Ingredients
1/2 cup butter
2 eggs
1/2 teaspoon baking soda
1 cup cornmeal
1 cup all-purpose flour
1/2 teaspoon salt
1 cup buttermilk
Directions
1. Preheat oven to 400 degrees F.
2. In a mixing bowl, add the eggs and beat with a fork until blended. Stir in the buttermilk and the baking soda.
3. Add the cornmeal, flour, and salt and stir until just combined.
A few lumps are just fine and dandy.
4. Melt the butter in large cast iron skillet. Remove from the heat.
5. Pour the batter into the hot butter and quickly stick the skillet into the hot oven.
6. Bake for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean.
