Butter, Shortening, Or Lard? Which makes A Better Biscuit?
Butter, vegetable shortening, and lard are what makes a biscuit flaky. Lard and vegetable shortening makes a biscuit flakier, but butter gives the best flavor. I choose butter for most of my biscuit. Depending on what I am serving my biscuits will sometimes change my choice. For example, if I am making a ham biscuit, I choose butter to off-set the fats in ham. If I am making biscuits for a soup I choose lard or shortening because the flavor focus is the soup.
What is the Secret to Flaky Biscuits?
The secret to great biscuits is cold butter! COLD COLD COLD BUTTER and not overworking the dough. When snapping the butter into the flour, sometimes it gets overworked and melts blending the dough too much. The dough should have flattened flecks of butter throughout before going into the oven.
Southern Buttermilk Apple Cheddar Biscuits
Ingredients
- 1 cup apples, peeled and chopped
- 2 cups all-purpose flour
- 1/4 cup cornmeal
- 2 ½ teaspoons baking powder
- 1 teaspoons sugar
- 1 teaspoon kosher salt
- ½ teaspoon baking soda
- ½ cup cold unsalted butter, grated
- 1½ cups shredded sharp white Cheddar cheese
- 1 cup whole buttermilk
Ingredients
Preheat oven to 450°.
In a medium bowl, stir together flour, baking powder, sugar, salt, and baking soda. Using your fingertips, snap the cold butter into flour mixture until crumbly.
Add the buttermilk, cheese, and chopped apples, stirring just until combined.
Roll out the dough to 1/4 inch thick circle.
Cut out biscuits using a circular biscuit cutter. Place on a parchment lined baking sheet.
Bake until golden brown, 18 to 20 minutes.
Serve warm with honey and butter.
