Ingredients
- 24 Hawaiian Sweet Rolls
- 20 ounces sausage
- 8 eggs
- 1 tablespoon butter, unsalted
- 1/3 cup milk
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 3 cups mozzarella cheese, shredded
- 4 tablespoons butter, melted (unsalted)
- 2 tablespoons maple syrup
- red pepper flakes (optional)

Instructions
Prep
Preheat oven to 350°F. Spray a 9×13 casserole dish with non-stick cooking spray.
Carefully slice the Hawaiian rolls in half and place the bottoms in the prepared baking dish. Set tops aside.
Sausage
In a skillet, cook the sausage keeping the meat in bite-sized chunks. Drain and set aside to cool.
Eggs
Add a tablespoon of butter into a skillet and melt over medium heat. Add the eggs, milk, salt, and pepper into a bowl and whisk to combine. Pour into the heated skillet. Use a rubber spatula to move the eggs back and forth. Avoid over moving. Just before the eggs are completely done remove from heat. The heat from the pan will finish the job. Set aside.

Melt the butter and stir in the maple syrup.
