Rainbow Veggie Wraps
Ingredients
Spicy Carrot Hummus
- 1 1/2 cup chickpeas
- 1/2 cup sliced carrots, roasted at 350° F until soft
- 2 garlic cloves
- 2 tablespoons tahini
- 1/4 cup olive oil
- 4 tablespoons fresh lemon juice
- 2 tablespoons red pepper flakes
Wraps
- 8 spinach tortilla wraps
- cucumber, sliced into sticks
- yellow + red + orange peppers, cut into sticks
- spinach leaves, julienned
- purple cabbage, shredded
- carrot sticks, sliced into sticks
Optional
- 8 ounces cream cheese
Instructions
Spicy Carrot Hummus
Add all of the ingredients into a food processor and pulse until completely smooth.
Assembly
Spread a wrap with the Spicy Carrot Hummus.
Optional: Spread 1/2 with cream cheese and 1/2 with spicy carrot hummus. WOW FACTOR!
Starting 1/4 of the way down from the top, lay on the veggies in rows.
Roll tightly being careful not to tear the wrap.
Slice and enjoy!

- cucumber sliced into sticks
- yellow + red + orange peppers cut into sticks
- spinach leaves julienned
- purple cabbage shredded
- carrot sticks sliced into sticks
