Ingredients
- 8 ounces Jiffy Corn Muffin mix
- 15 ounces whole kernel corn, drained
- 15 ounces creamed corn, not drained
- 1 cup sour cream
- 1/2 cup melted butter
- 1 cup cheddar cheese, optional
Instructions
Preheat oven to 350°F.
Grease a 10 x 7 baking dish with vegetable spray.
Add all ingredients into a mixing bowl and mix to just combine.
Notes
- Store corn casserole in an airtight container for up to two days.
- Wrap corn casserole tightly and freeze for up to one month.
- Add 1 cup of cheese into the mixture for an even cheesier corn casserole.
- Add an egg to the mixture for a thicker sponge-like texture.
