OH Y’ALL! This is a good one!
One of those I don’t have anything planned what is in the fridge kind of accidental delicious creations. Give it a try!
6 boneless skinless chicken things, fat cut
1 tablespoon coconut oil
3 large firm sweet peaches, peeled and diced
3 ears fresh sweet corn, cut off the cob
1 medium purple onion, diced
3 tablespoons peach preserves or jelly
1 teaspoon salt
1 teaspoon pepper
3 cups arugula
1. Add the coconut oil to a large skillet and melt over medium heat.
2. Add the prepared chicken thighs to the hot skillet and cook for 5 minutes or until half of the thigh has turned white. Flip them and cook for 5 more minutes. Remove the cooked chicken thighs from the pan onto a plate and set aside.
Sparkle Tip! Avoid moving the chicken thighs around. Leave them alone and let them cook half way through. This will keep your chicken from stickin’. When you flip them. Same thing! Just step away and let them cook! SMILE!
3. Add the prepared peaches, sweet corn, purple onions, peach preserves, salt, and pepper to the same pan used for the chicken thighs and sauté for 5 minutes or until tender still over medium high heat.
4. Add the cooked chicken thighs into the Peaches & Sweet Corn Relish and cook for three more minutes.
5. Place the hot Peaches & Corn Sweet Corn Relish over a bed of Arugula and serve!
