Brussel Sprouts! Not only are they awesome because they make a great Thanksgiving or Christmas dinner side dish, they are full of fiber, vitamin A, and they have lutein and zeaxanthin which will protect your pretty eyes! Awesome!

Oven Roasted Brussel Sprouts, Peppered Bacon, and Dried Cherries

Brussels Sprouts with Peppered Bacon and Dried Cherries

Ingredients

1 pound brussel sprouts, washed, dried leaves removed, bottom stems removed, sliced into quarters
5 slices peppered bacon
5 tablespoons bacon grease
1/2 cup dried sweet cherries
2 garlic cloves, finely minced into a paste
a pinch of pink salt
a pinch of black pepper

Oven Roasted Brussel Sprouts, Peppered Bacon, and Dried Cherries

Directions

Preheat oven to 350ºF.

Line a baking sheet with parchment paper.

Cook the bacon, break it into small pieces and set it aside keeping 5 tablespoons of bacon grease.

In a bowl, toss the prepared brussel sprouts and cherries in the rendered bacon grease, garlic, salt, and pepper.

Spread the coated brussel sprouts onto the parchment lined pan.

Bake for 25 minutes then remove them from the oven.

Sprinkle the bacon pieces and the dried cherries on top of the brussels sprouts.

Return the baking sheet to the oven and bake for 10 more minutes.
