Oh So Simple Salted Caramel Corn

Salty and Sweet! This caramel corn is simple and quick to make. It is heavenly to eat right away, perhaps a movie night!? It is fantastic for packaging and giving as a homemade gift. Maybe for those extra special little trick-or-treaters that come to your door.  Sparkle! Sparkle! XX -gwyn

Ingredients

20 cups popped popcorn, un-popped kernels removed
2 cup brown sugar
1 cup white sugar
1 cup butter
1/2 cup light corn syrup
1 teaspoon vanilla extract
1 teaspoon baking soda
sea salt

Instructions

Prepare a baking sheet by lining it with parchment paper or a silicone baking mat. Preheat the oven to 300ºF.

Add the popcorn to a large bowl. Double check for any un-popped kernels.

In a medium saucepan over medium heat, stir together the brown sugar, butter, and corn syrup until the butter has melted and the mixture reaches a slow bubble. Allow the mixture to bubble for “4” minutes. Remove from the heat immediately and mix in the vanilla extract and baking soda.

Pour the caramel mixture over the popcorn. Using a large rubber spatula, quickly stir to coat.

Spread the popcorn evenly onto the prepared baking sheet and sprinkle with the sea salt.

Bake:  10 minutes = A Chewy “eat it the same day” treat.

15 minutes  = A Crunchy “perfect for packaging” treat.

Remove from oven and let it cool completely. Break into bite-sized pieces and serve or package.

Notes

Clean Up! Add water to the saucepan and bring to a boil for an easy cleanup.
