Simple Salted Caramel Corn is…

Heavenly to eat right away, perhaps a quick goodie for a movie night!?

Fantastic for packaging and giving as a homemade gift!

Perfect for extra special trick-or-treaters that knock on your door?!

If you have avoided making caramel corn because the thought of limited time and a candy thermometer causes the shivers, you must give this recipe a try.

My lovely friend Dawn taught me how to make this delightful treat and I am passing this magic on to you.

Simple Salted Caramel Corn

Ingredients

20 cups popped popcorn, un-popped kernels removed
2 cup brown sugar
1 cup white sugar
1 cup butter
1/2 cup light corn syrup
1 teaspoon vanilla extract
1 teaspoon baking soda
sea salt

Oh So Simple Salted Caramel Corn

Directions

1. Prepare a baking sheet by lining it with parchment paper or a silicone baking mat. Preheat the oven to 300ºF.

2. Add the popcorn to a large bowl. Double check for any un-popped kernels.

3. In a medium saucepan over medium heat, stir together the brown sugar, butter, and corn syrup until the butter has melted and the mixture reaches a slow bubble.

4. Turn the heat down just tad and allow the mixture to bubble for “4” minutes. Remove from the heat immediately and mix in the vanilla extract and baking soda.

5. Pour the caramel mixture over the popcorn.

6. Using a large rubber spatula, gently and quickly stir to coat.

7. Pour the popcorn onto the prepared baking sheet evenly and sprinkle with the sea salt.

8.  Bake: 10 minutes = A Chewy “eat it the same day” treat.

15 minutes = A Crunchy “perfect for packaging” treat.

8. Remove from oven and let it cool completely.

9. Break into bit sized pieces and serve or package it for giving.

Notes

Clean Up! Add water to the saucepan and bring to a boil for an easy cleanup.
