Mini Sparkle Bundt Cakes
Ingredients
1 box vanilla cake mix
1 teaspoon lemon extract (optional)
2 +/- cups powdered sugar
4 +/- tablespoons milk
1 teaspoon clear vanilla
4 pastel gel food colors
1 tablespoon white food coloring
edible star glitter
6 mini bundt pan/s (Bundlette Pan)
cooling rack
Directions
1. Pre-heat oven to 350° F.
2. Spray the mini bundt pans with bakers cooking spray and set aside.
3. Place a cooling rack over a sheet of aluminum foil, parchment paper, or a large cookie sheet.
3. Follow the instructions on cake box to make the batter. Stir in the lemon extract if preferred.
4. Fill the mini bundt pan 1/2 full with cake batter.
5. Bake until golden brown. This will take about 20 minutes depending on your oven.
6. Invert the cakes on the cooling rack and let them cool completely.
In the meantime…
7. Add the powdered sugar, clear vanilla, white food coloring, and water to a large mixing bowl and whisk until smooth. The icing needs to be a tiny bit thick, adjust accordingly.
8. Separate the glaze into four small bowls (Cereal will bowls work great!) and add a few drops of the food coloring to each. Mix until combined.
9. Carefully flip the cake pan over on the cooling rack.
10. Drizzle the icing over each cake and top with the star glitter.
