Lemon Basil Pasta Salad Recipe
Ingredients
- 3 cups uncooked farfalle (bowtie/butterfly) pasta
- 1 cup fresh or frozen uncooked green peas (Avoid using canned green peas.)
- 8 tablespoons fresh squeezed lemon juice
- 1 teaspoon salt
- 5 tablespoons extra virgin olive oil
- 1 teaspoon pepper
- 1 tablespoon lemon zest
- 6 fresh basil leaves, julienned (See above instructions.)
- 1 cup fresh parmesan cheese, grated
Lemon Basil Pasta Instructions
Cook The Farfalle Pasta
- Cook the farfalle (bowtie/butterfly) pasta according to box instructions.
- Drain well then add to a bowl.
- Set aside.
Prepare the Green Peas For The Pasta Salad
If you are using frozen peas, follow package instructions using the below ice bath to stop cooking when done.
- Add ice into a mixing bowl and cover with fresh water.
- Bring a small saucepan of water to a rolling boil. Drop the heat to medium low.
- Drop in the green peas and boil for exactly 3 minutes.
- Quickly and carefully drain the peas and add them to the ice bath to stop the cooking.
- Drain the water from the peas.
- Set aside.
Make the Lemon Basil Dressing
- Add the lemon juice, lemon zest, basil olive oil, salt and pepper to a small bowl and whisk to combine.
- Set aside.
Assemble The Lemon Basil Pasta Salad
- Add the green peas and parmesan cheese into the bowl of prepared pasta.
- Drizzle the lemon basil dressing over the salad and toss.
- Garnish with fresh lemon slice and basil.
