- 1 1/2 pounds ripe tomatoes, washed and cut into cubes
- 1 cup white sugar
- 2 tablespoons apple cider vinegar
- 1 tablespoon minced ginger
- 1 tablespoon red pepper flakes
- 1/8 teaspoon ground cloves
- 1 teaspoon cinnamon
- 1 teaspoon salt
- Combine all of the jam ingredients in a large saucepan and bring to a boil over medium heat stirring to dissolve sugars.
2. Lower the heat to a slow simmer stirring occasionally for 1 to 2 1/2 hours or until the tomato jam mixture turns into a thick jam. Keep your eye on it!
3. Store in a jar with a lid or an airtight container for up to 10 days in the refrigerator.
