Hot Bacon Caprese Salad with Heirloom Tomatoes.
Yesterday at the Olympia Farmers Market I was greeted by a beautiful display of Heirloom Tomatoes. Inspired by their vibrant colors I decided to grab a few for a Sparkling Charm recipe.
When returning home I knew I wanted to make a Caprese Salad. Passing a favorite bacon burger diner by the Nisqually River Basin, it occurred to me that my Hot Bacon Dressing recipe might just make this a winner. Guess What? IT IS! Give this a try.

Hot Bacon Caprese Salad with Heirloom Tomatoes
Ingredients
Salad
5 medium heirloom tomatoes, sliced
12 heirloom cherry tomatoes (optional)
2 (8 ounce) balls of fresh mozzarella cheese, sliced
3/4 cup fresh basil
dash of salt
dash of pepper
Hot Bacon Dressing
6 tablespoons bacon grease, rendered from frying 5 slices of bacon
1 garlic clove, minced
4 tablespoons apple cider vinegar
2 tablespoons brown sugar
1 tablespoon dijon mustard
1/4 teaspoon pepper
1/8 teaspoon salt
5 slices bacon, crumbled
Directions
Fry 5 or 6 pieces of bacon to render 6 tablespoons of bacon grease.
Add the bacon grease, minced garlic, apple cider vinegar, sugar and dijon mustard to a saucepan over medium heat. Whisk until the brown sugar has dissolved and the mixture thickens. Remove from the heat and leave it in the saucepan. Just before serving, the dressing will need to be re-heated.
Layer the sliced heirloom tomatoes, mozzarella slices, and fresh basil on a plate or platter. Sprinkle with crumbled bacon. Season with a dash salt and the pepper.
Just before serving, re-heat the Hot Bacon Dressing and drizzle with the hot bacon dressing. Serve Immediately.
Note: Add sliced avocados too!
