How To Store
Store in an airtight container for up to 5 days or in the refrigerator for up to a month.
Ho Ho Holiday Energy Bites (Gluten Free)
Ingredients
- 2 cups old-fashioned oats, uncooked
- 1 cup shredded unsweetened coconut, plus a little extra for rolling
- 1 cup dried cranberries
- 1 cup raw unsalted pumpkin seeds
- 1 cup cacao nibs or chocolate chips
- 1/2 cup ground flax seeds
- 2 tablespoons chia seeds
- 1 cup almond butter, oil drained off
- 1 cup maple syrup
- 2 tablespoons vanilla bean paste
Instructions
Add all of the energy bite ingredients into a large mixing bowl. Use a wooden spoon to mix until well combined. The mixture needs to be wet enough to stick together.
Scoop out a heaping tablespoon one at a time and roll into firm bite size balls.
If your mixture is sticky, add more oats. If it is too dry to stick, add more maple syrup.
Give each ball a roll in the extra coconut and place on prepared sheet.
Place in an airtight container to store for up to 5 days or in the refrigerator for up to one month.
