Easy Chicken Gyro Meat In A Loaf Pan Recipe
Serves 8
Ingredients
- 2 pounds boneless skinless chicken thighs or sliced thin chicken breasts
- 1/2 cup greek yogurt
- 4 garlic cloves, minced
- 4 tablespoons fresh lemon juice
- 1 tablespoon fresh lemon zest
- 1 tablespoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 1 teaspoon black pepper
Easy Chicken Gyro Instructions
Make the Marinade
Add the Greek yogurt, garlic cloves, lemon juice, lemon zest, oregano, basil., cinnamon, sea salt, and pepper into a mixing bow Whisk until completely combined.
Marinate the Chicken
Add the chicken into a large ziplock bag and carefully add the marinade. Zip the bag tight. Toss and turn to coat the chicken. Place in the refrigerator for at least 3 hours or overnight.
Time to Assemble and Bake
Preheat the oven to 350°F.
Line a 9” X 5” loaf pan with parchment leaving 3 inches of paper folded over the long edge of the pan. Set aside.
Layer the chicken in the prepared loaf pan giving it a gently press between each layer.
Bake for 60 minutes or until a meat thermometer reaches 165° F in the center. Remove from the oven. Keep covered for 10 minutes. Drain the juices. Lift from the pan using the parchment wings onto a cutting board and slice.

- The Greek yogurt will make the chicken super tender. This recipe only requires a minimum of 2 hours to marinate. However, 24 hours yields super tasty flavor.
- All ovens bake differently. be sure to use a meat thermometer to make sure the chicken reaches 165°F
