Pizza Crust Ingredients:
This recipe makes two 10 inch, thick crusts.
3 1/2 cups of bread flour for a crispy crust or 3 1/2 cups all-purpose flour for a chewy crust
1/2 teaspoon sugar
1 package instant dry yeast
2 1/2 teaspoons kosher salt
1 1/2 cups water, very warm (110 degrees F)
2 tablespoons olive oil, for dough
2 teaspoons olive oil, for bowl and pizza pan
2 tablespoons cornmeal
Note: If you aren’t making two pizzas, drop one in a freezer bag. Mark the date on the bag. You can keep the crust in the freezer for 3 months.
Pizza Crust Directions:
*With one teaspoon of olive oil, lightly grease a pizza pan. Sprinkle the pan with cornmeal. Set aside.
Attach a dough hook to a stand mixer.
Add the flour, sugar, yeast, and kosher salt to the bowl of the stand mixer. Combine on low-speed. Add the water and 2 tablespoons oil. Continue mixing until the dough forms into a ball.
Note: If the dough is sticky, add additional flour, 1 tablespoon at a time. If the dough is dry, add water, 1 tablespoon at a time.
Turn the mixer to medium speed and beat until the dough forms a smooth and consistent ball. About 4 minutes.
Grease a large bowl with 1 teaspoon of the remaining olive oil and place the dough ball in the bowl. Cover the bowl with plastic wrap and put it in a warm area to let it double in size. This can take up to 1 1/2 hours.
Turn the dough out onto a lightly floured surface and divide it into 2 equal pieces. Cover each with a clean kitchen towel and let them rest for 10 minutes.
Press one of the dough balls out with your fingers to form a 10″ crust.
*Transfer the crust to the prepared pizza pan.
Cream Sauce
3 tablespoons butter
2 tablespoons all-purpose flour
1/2 cup cream
1 garlic clove, crushed
In a medium sauce-pan, melt the butter. Add the cream and the clove of garlic. Bring to a slow simmer stirring constantly. Drop the heat to low. Add the flour. Continue to stir constantly until the mixture thickens.
Toppings:
1 cup shredded mozzarella cheese
tomatoes, sliced
basil, fresh
1/2 teaspoon thyme
salt/pepper
Directions:
Pre-heat Oven: 425 degrees F
With a prepared pizza crust on a pizza pan ready for the oven (directions above), use a spoon to spread out the cream sauce evenly. Sprinkle the mozzarella on the sauce. Decorate the pizza with the tomatoes and the basil and the thyme. Sprinkle with a dash salt and pepper.
Place the pizza in the oven for 2o to 25 minutes or until the crust appears golden brown.
Remove the pizza from the oven and let it cool for 5 minutes.
