Cranberry fan our not…
It is perfect for holiday guests. You can serve it for breakfast with a hot beverage or you can serve it as a dessert with a scoop of ice cream or a dollop fresh whipped cream.
1 tablespoon melted unsalted butter
2 cups fresh chopped cranberries, washed, and stems removed
*If you are using frozen cranberries, let them thaw before chopping.
3/4 cups chopped walnuts
1 tablespoon orange zest
1/2 cup white sugar
2 large eggs
3/4 cups unsalted butter, melted and cooled
1 cup all purpose flour
1 cup white sugar
1/2 teaspoon salt
1/2 teaspoon vanilla paste or extract
1/8 teaspoon almond extract
1/2 cup course white sparkling sugar
Preheat the oven to 350°. Lightly grease a 10″ pie plate.
Melt 1 tablespoon of butter and drizzle it in the pie plate. Add the cranberries and the walnuts to the pie plate. Sprinkle with the orange zest then the 1/2 cup white sugar. Set aside.
In a mixing bowl, beat together the eggs, 3/4 cup melted butter, 1 cup white sugar, flour, salt, vanilla, and almond extract.
Spoon on big dollops of the thick batter and spread over the cranberry mixture with a wet rubber spatula.
Sprinkle with the course sugar and bake for 40 to 45 minutes or until a knife come out clean.
SERVE WITH A SCOOP OF VANILLA ICE CREAM OR A DOLLOP OF WHIPPED CREAM.
