Coconut Cluster Bark
My husband brought home a bag of coconut clusters from Costco last weekend. He ate the entire bag leaving one small piece. I found this note on the counter with that last tiny bite.
Babe, this stuff was delicious. Eat this bite and make me more. Bless his heart!
I am not sure I have replicated the Costco version, but here is what I came up with after dissecting the small piece he left me. I am certain this is a healthier version and I must say it is GOOD STUFF!
If you are a coconut lover or have one in your life, this recipe is a winner.
Coconut Cluster Bark
Ingredients
1½ cups coconut flakes
1 cup sliced almonds
¾ cup pumpkin seeds
¼ cup chia seeds
3/4 cup honey
Instructions
1. Pre-heat oven to 200° F.
2. Place all ingredients into a mixing bowl and gently toss until everything is lightly coated with the honey.
3. Pour the mixture out onto a parchment lined baking sheet and gently press out into a flat 1/4″ thick sheet.
4. Bake for 1 hour or until the bark has slightly hardened. This may vary depending on your oven.
5. Remove from oven and cool completely.
6. Break into bite size pieces.
