I believe I get my love for candied orange slices from my mother. Dipping them into a pool of decadent dark chocolate takes the love to an entirely new level. These are not only delicious, but they are pretty on a platter covered in sparkling sugar and they are a great treat to share with a neighbor.
Candied Orange Slices
Ingredients
3 oranges
2 cups water
2 cups granulated sugar
5 ounces dark chocolate
Instructions
Wash the oranges removing any waxy residue and stickers. Slice the oranges 1/4 inches thick. In a large pot, add the sugar and the water. Bring the mixture to a gentle boil over medium heat, stirring to dissolve the sugar into the water. Once dissolved, avoid stirring to prevent crystallization. When the mixture reaches a gentle boil, add the orange slices and lower the heat to a simmer. Cook the orange slices for 15 minutes. Flip them and cook for another 15 minutes until the orange peel becomes translucent and the syrup thickens. Using tongs, carefully remove the oranges from the syrup and place them on a wire rack over a parchment lined cookie sheet. Bake the oranges for 1 hour at 200 degrees. Remove them from the oven and let them cool for another hour. Melt the dark chocolate and dip the candied orange slices halfway. Place the Chocolate Dipped Candied Orange Slices on a parchment-lined tray and cool until the chocolate hardens again. DELICIOUS!
*Tip: Drizzle the remaining orange syrup over pound cake, add a dollop of whipped cream and the zest of an orange to garnish.
