Chewy Chunky Vegan Chocolate Chip Cookies

Chewy Chunky Vegan Chocolate Chip Cookies
Ingredients
1/2 cup solid coconut oil
1 and 1/4 cups brown sugar, packed
2 teaspoons pure vanilla extract
1/4 cup coconut milk
1/4 cup unsweetened applesauce
2 and 1/4 almond flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups vegan chocolate chips
flaky sea salt
Directions
- Preheat oven to 375 degrees. Line a large baking sheet with parchment paper. Set aside.
- In a large mixing bowl add together the coconut oil, brown sugar, and pure vanilla. Using a mixer, beat until well combined.
- Add in the coconut milk and applesauce and continue mixing. Set aside.
- In a separate bowl combine the flour, baking soda, and salt. Whisk well until well combined.
- Add the dry ingredients into the wet mixture a little at a time until well combined.
- Using an ice-cream scoop, scoop mounds of dough onto the prepared cookie sheet, leaving a few inches between each cookie.
- Bake for 8 to 12 minutes, or until the edges are golden brown.
Okay baking beauties and handsome gentlemen….
The edges only need to be a tiny bit golden brown with the cookie centers just starting to set. THIS IS WHEN YOU REMOVE THEM FROM THE OVEN!!!!
8. Sprinkle with sea salt just out of the oven.
9. Cool cookies on the baking sheet for 15 minutes and then transfer them to a cooking rack.
