Birthday Cake Popcorn

Ingredients

6 cups mushroom popcorn, lightly salted
1 1/2 cups white chocolate chips
2 tablespoons coconut oil
5 tablespoons vanilla cake mix
1/2 cup rainbow sprinkles
1 1/2 cups mini marshmallows

Directions

1. Pop the popcorn according to the package’s instructions. Remove all un-popped kernels.

 

2. Add 6 cups of the popped popcorn and the mini marshmallows to an oversized bowl. Set aside.

3. Combine the white chocolate chips and coconut oil in a small microwave-safe bowl and heat in 15 second intervals stirring in between until melted.

4. Stir in the cake mix.

5. Carefully pour the white chocolate mixture over the popcorn and toss gently with a rubber spatula until coated.
