Best One Pot Chili Mac and Cheese Recipe
Ingredients
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1 onion, diced
- 8 ounces ground beef
- 2 teaspoons chilli powder
- 1 teaspoon cumin
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 cups chicken broth
- 2 cups crushed tomatoes
- 16 ounces red kidney beans, one can drained and rinsed
- 2 cups elbow macaroni
- 8 ounces cream cheese
- 1/2 cup evaporated milk
- 1 cup sharp cheddar cheese, extra for garnishing
- 2 scallions, thinly sliced
Chili Mac Instructions
Heat the olive oil in a large skillet or 4 quart dutch oven over medium high heat. Add the garlic, onion, and ground beef. Cook until browned. Drain the excess fat.
Stir in the chicken broth, tomatoes, beans, chili powder, cumin, salt, and pepper. Bring to a simmer and stir in the pasta. Bring to a boil. Next, reduce heat back to a simmer for 15 minutes or until pasta is cooked.
Stir in the milk, cream cheese, and cheddar cheese until melted.
Ladle into bowls and top with scallions and shredded cheddar.
