Air Fryer Honey Lime Drizzled Coconut Shrimp

I cannot stop with the new air fryer.  Last night I created this quick and easy recipe. I made half in the air fryer and half in the oven. Cooked both ways, this is a great recipe for your summer dinner rotation.

Let’s take a few shrimps for a coconut dip!

Honey Lime Drizzled Coconut Shrimp

Ingredients

3/4 cup all-purpose flour
1 teaspoons black pepper
3 large eggs
1 cup coconut, flaked and unsweetened
3/4 cup panko (Japanese Bread Crumbs)
24 medium shrimp, tail-on, raw, and detained
cooking spray
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup honey
lime wedges

Instructions

Whisk together the flour, pepper, and the salt in a small bowl

Lightly beat the eggs in a small dish with a fork.

Toss together the panko crumbs and the coconut.

Time to go for a dip little shrimpy!

Holding the shrimp by the tail…

  • Dip the shrimp in the flour mixture and give it a shake.
  • Then a quick dip in the egg wash.
  • Next a dip into the panko and coconut mixture. Give it a good press.
  • Finally a quick spurt of cooking spray.

Place half of the shrimp in air fryer basket, and cook at 400°F for 3 minutes. Flip the shrimp and cook another 4 minutes.

OR

Place the shrimp on a baking sheet lined with parchment and place them in a 400°F on the top rack. Cook them for two minutes, flip them, and cook for two more minutes.

Season with salt and pepper.

Repeat with the remaining shrimp.

Give the shrimp a drizzle of honey  and a quick squeeze of lime just before serving.

It will be hard not to eat them while the others cook. BE STRONG! SMILE!
