On a rare occasion do things turn out fine and dandy on the first try. GUESS WHAT!!!! This was one of those occasions.

Ingredients

  • 1.5 pounds heirloom carrots, peeled and washed
  • 4 tablespoons agave
  • 3 tablespoons butter, melted
  • 3 tablespoon dijon mustard
  • 1 tablespoon flaked salt
  • 1/4 teaspoon pepper

Roasted Carrot Instructions

Preheat oven to 375° F.

In a small bowl, add the butter, agave, and dijon. Mix with a fork until combined.

Arrange the carrots on a baking sheet.
